Le Soufflé (G/F Amorsolo Square, Rockwell)
We recently had the chance to dine at the mother of all fine dining establishments in the city: Le Soufflé.
I had my first Le Soufflé dinner at their branch at the Fort ages ago, and to this day still fondly recall that pleasant dining experience.
Chef Jessie Sincioco was present during this recent visit, welcoming us with her warm smile and renowned culinary masterpieces.
The setting is fine dining at its most refined and glamorous — with warm lighting, high ceilings, and a strategically placed collection of Amorsolo’s works of art. The ambiance is just as perfect for the most private function as it is for the most jubilant occasions.
Now let’s talk about how the food measures up.

Being with a relatively large party of diners, we were given our fill of complimentary bread. The selection was not very varied, and is quite standard for an establishment like this.

Tessie Tomas Salad.
Nothing beats the original. Succulent roasted prawns, smoked salmon,
and shiitake mushrooms with mesclun leaves drizzled with creamy
balsamic dressing. Easily trumps out the versions in Duo and Chef’s Quarter.


Pasta ala Jessie — the chef’s signature pasta dish — with prawns, scallops, and parmesan slices. Very good choice and runs away as one of my favorites of the night. Pasta choices include spaghetti, fettuccini, linguini, whole wheat, etc. We had the angel hair.

The Lamb Chops are very tender and does not have the typical funky aftertaste from lamb meat.

I totally forgot what this dish is called (pardon me for not taking notes haha) but it’s a form of dry risotto with mushrooms and veggies. I liked this more than the other one below.

The Crab Rice and Saffron Risotto tasted somewhat like a form of seafood paella with arborio rice. It had a strong, fragrant smell and is very flavorful.

Chilean Sea Bass with Goose Liver. What a dish — the fish was tender and silky, and when eaten together with very rich foie gras this makes for one of the best gastronomic delights I’ve had recently.

This tuna dish looked (and tasted a bit) like chicken.

The Tournedos Rossini is US Angus Beef topped with pan-fried goose liver. We had it cooked medium well, as I like it. The beef was plump, tender, and bursting with flavor.

For dessert, we had a couple of orders. First up is the Dark Chocolate Soufflé – light, fluffy, and creamy..

..the Panna Cotta Trio (chocolate, mango, and coffee)..

..and a slice of Chocolate Decadence. Desserts were good, but I didn’t think they were as stunning as as the main courses.

Service was very professional and becoming of the resto’s legendary stature, but was just a few levels shy of personalized excellence. I had expected that the price would be eye-popping, but it was nothing unwarranted given the food quality — at an average of about P1600++ per head for a standard set.
Overall Verdict: Le Soufflé is a total multi-sensory dining experience, and is one that should not be missed by any lover of good food and fine cuisine.
